Baked Eggs with Cream and Herbs

This is a wonderfully simple breakfast.  And ohmigosh does it taste yummy!

Ingredients:

Cooking Spray

2 tablespoons heavy cream
4 large eggs
salt and pepper
dried herbs of any variety (I like Italian Seasoning mixes)

Directions:
  1. Heat oven to 425⁰F. 
  2. Spray your 2 ramekins (ramekins are small casserole dishes, usually big enough for just one serving) with cooking spray.  Place these on a baking sheet (makes transporting the ramekins into the oven and out again easier). 
  3. Place one tablespoon of cream into each ramekin. 
  4. Crack two eggs into each.   If you don’t like runny yolks, use a fork and scrambled the eggs a bit.
  5. Season with ½ teaspoon salt and ¼ teaspoon pepper.
Wanna be creative?  Instead of herbs, add Parmesan cheese, berries or any combination thereof!


Serves 2; 180 calories; 20 minutes
