Okay, it's true, you can purchase pancake mix...but these will taste so much better, promise! For extra awesome, add a handful of chocolate chips, walnuts, or fresh blueberries.
Ingredients
1 cup all-purpose flour
2 tablespoon sugar
½ teaspoon salt
3 tablespoon butter/margarine, melted
1 large egg, lightly beaten
2 ½ teaspoons baking powder
1 ¼ cups milk

Directions
- In bowl, combine flour, sugar, baking powder and salt.
- Add milk, butter, and egg. Stir until flour is moistened.
- Heat griddle/12-inch skillet over med-high heat until drop of water sizzles; use cooking spray.
- Pour batter by scant ¼ cups onto griddle.
- Cook until tops are bubbly (with some bubbles popping) and edges appear dry.
- Flip and cook until underside is golden.
- Add more cooking spray every 2 or so pancakes. Don’t worry if you get more “funny shapes” than “rounds”…if Tara couldn’t make rounds, I don’t see how we can be expected to! Also, I usually only make one or two pancakes in a round. It takes longer this way, but it also means I burn them less often. Oh, and feel free to toss the first one as Rory from Gilmore Girls suggests!
